On New Years Eve, I was looking for something sweet and delicious and alcoholic.  If there’s one thing that’s pretty standard for our house is that there’s a plethora of bourbon and scotch but not so much for the “sweet” alcoholic beverage concoctions.  I came across this recipe and decided to change it up based on what we had in our place.

Jen’s Dirty Grasshopper
1 serving, (100% not Weight Watchers Friendly, I think it’s around 12 PP)

1.5 oz Smirnoff vodka (or any equivalent type)
1 oz creme de menthe
1 oz Kahlua coffee liqueur
fill with non-fat milk

Pour vodka, creme de menthe, and kahlua in a glass over ice. Add milk to fill. Garnish with whatever you’d like, and serve.

So I love me some eggnog.   Unfortunately, I think it has to be up there with everything on the “this is why you’re fat” website.  So I searched for a “better” alternative.  Unfortunately, everything in the store that has the “light” label on it was also not really acceptable.  When nothing in the store satisfies, make it yourself, I always say.  I found this recipe on the Food Network’s website.  It originally called for vanilla bean, which I could not (and didn’t really have the patience to) find.  I thought it came out pretty good, B thought it was a little orange-y tasting for his tastes and as a replication of the out of carton version of eggnog.  When I make in the future (that is, tonight to enjoy with some bourbon) I’m going to use less orange peel.  Enjoy!

Low-Fat Eggnog (Adapted from Food Network)
6 servings (1/2 cup), 3 Weight Watchers Points Plus per serving

2 cups nonfat milk
2 large strips orange zest
1 large strip of lemon zest
1 tsp pure vanilla extract
2 large eggs plus 1 egg yolk
1/3 cup sugar
1 teaspoon cornstarch

Bourbon (optional)
Freshly grated nutmeg, for garnish

Directions

Combine 1 1/2 cups milk and the citrus zest in a medium saucepan. Add the vanilla extract to the saucepan and bring to a simmer over medium heat. Meanwhile, whisk the eggs, egg yolk, sugar and cornstarch in a medium bowl until light yellow.

Gradually pour the hot milk mixture into the egg mixture, whisking constantly, then pour back into the pan. Place over medium heat and stir constantly with a wooden spoon in a figure-eight motion until the eggnog begins to thicken, about 8 minutes. Remove from the heat and immediately stir in the remaining 1/2 cup milk to stop the cooking. Transfer the eggnog to a large bowl and place over a larger bowl of ice to cool, then chill until ready to serve.

Remove the orange and lemon zest and and strain into pitcher and/or glasses. Spike the eggnog with bourbon (or white rum if preferred), if desired, and garnish with nutmeg.

Watermelon Vodka Martini

Sitting here, on my couch with my oh-so-annoying dog grumbling in my ear and a bad headache I knew I needed something desperately: a stiff drink.  Thinking ahead and about what was in our fridge, I decided to try my hand at making a fruity martini.  We bought a watermelon this weekend and had a lot sitting around in our fridge.  I am also toying with the idea of having a BBQ or get together on the weekend of the Fourth of July so I wanted to make some sort of drink alternative to beer and straight liquor that would work in the heat.

This actual got a good review from B, who almost never likes anything fruity or that isn’t 95% straight liquor.  There are a few changes that I will make in the future.  First, use an immersion blender instead of our Cuisinart to chop watermelon and blend.  We don’t have a really functional blender so I’ve been using the Cuisinart for these types of meals/drinks/etc.   It was insufficient to properly blend the watermelon and make the drink smoother.  Second, I need to make it colder.  I plan on, in the future, doing one of the following: either blend with ice or shake with ice.  Either way, the drink would have been much better ice cold, not that it was bad at slightly cooler than room temperature.

Watermelon Vodka Martini
2 servings, 5 Weight Watchers Points Plus per serving

2 C diced watermelon, off rind
3 shots vodka
2 tsp Splenda no calorie sweetener
1 tsp fresh mint, chopped

Rinse two martini glasses in cold water.  Place in freezer to get a frosted martini glass.  Using a blender (or immersion blender, see note above) grind the watermelon and mint until it is smooth and well pureed.  Add Splenda and vodka. Using a strainer, strain into frosted martini glasses.  Garnish with a slice of watermelon and spring of fresh mint.

I’ve been craving smoothies.  Its spring and its (rarely) sunny and warm here in beautiful Steelers Nation.  Most places I know that sell smoothies make them incredibly unhealthy with lots of sugar, ice cream, or full fat yogurt.  I decided I’d satisfy my craving by making a similar one at home.

Strawberry Banana Smoothie with Greek Yogurt
1 serving, 3 Weight Watchers PointsPlus per serving

5-6 ice cubes (or crushed ice)
6 large strawberries quartered
1 large banana
1/2 C Fage 0% Greek Yogurt
2 tsp Splenda (or another no calorie sweetener)

In a blender (or in a Cuisinart, since my blender is non-functional) add ice.  Run until ice is transformed into a slushy mixture.  Add strawberries and bananas.  Run until fruit is smooth.  Add yogurt and Splenda.  Again, run until smooth.  Serve immediately.
